Ingredients

Couscous

1 cup chicken broth or water

1¼ cups couscous

¾ teaspoon salt

Other ingredients

2 (5-ounce) cans oil-packed tuna

1 pint cherry tomatoes, halved

½ cup sliced pepperoncini

⅓ cup chopped fresh parsley

¼ cup capers

Olive oil, for serving

Salt and pepper

Directions

Boil the water or broth over medium heat. Add the couscous, cover, and set aside for 10 minutes.

Toss the tuna, pepperoncini, capers, tomatoes, and parsley in a bowl. Fluff the couscous with a spoon and season with salt and pepper. Top with the tuna mixture and olive oil. Serve.
